1997 vintage:
Despite the over 80 Gr. Residual sugar makes the Vouvray Moelleux fresh and full of subtleties. It is produced only in exceptional good years, a selection of mature and golden berries without noble rot (passerillage sur pied), which are read suksessif from early October to late October. Assemblage of various parcels of the 12-hectare domain. Thin layers - 0.5 to 5 meters, of loamy soil with flint on a tuff stone base. Average age of the vines 40 years, mechanical processing of the soil - 8 to 9 times a year, no use of chemical agents. 6,600 vines per hectare, short pruning, yield of 20 hl / ha. Manual harvest with successive harvest, the grapes are sorted according to the degree of ripeness and selected for the Vouvray Sec, Demi-Sec or Moelleux. Spontaneous alcoholic fermentation - up to 2 months, 70% in 300 liter wooden barrels - 5% new, and 30% in stainless steel tanks in cold basement made of tuff - at a constant 11 ° C. No sugar or acid fortification. In order to avoid the malolactic fermentation, the wines are tapped after the alcoholic fermentation, stabilized by cold and slightly sulfurized.
