Description

A fragrant lavender aroma coupled with leafy, herbal spiciness from the oak. Straw and cut-grass from the Sauvignon Blanc balance this wine beautifully with gently tropical fruits providing enough acidity to cleanse and draw out the finish. The palate is soft and plush, with long acidity and a strong finish. The Semillon and Sauvignon Blanc parcels were picked at maximum flavour maturity over several weeks, to ensure that all the various soil types and aspects of the vineyard were fully exploited. A combination of machine and hand harvesting was employed. Only the free-run parcels were used after a gentle pressing. Fermentation took place at 11 to 13°C, with 60% of the juice being fermented in two-year-old oak, for two months before final blending.
