The 1996 Bin 707 Cabernet Sauvignon may well turn out to be one of the best of the last two decades - complex and firm with superb balance and character. Cabernet from Coonawarra contributes strength and firmness of structure, while the Barossa component adds mouth-filling richness, resulting in a completeness of structure and flavour.

Deep crimson/purple. Intense blackcurrant/cedar/vanillin aromas with plenty of savoury/meaty barrel ferment oak characters. The palate is strong and powerful with dense plush blackcurrant cedar fruit, some tropical/coconut/meaty flavours, lovely looseknit, evenly proportioned, grainy tannins and excellent length. A perfectly balanced wine with all the hallmarks of a great long-term cellaring wine.

This is why I drink wine. Pulled the cork and stuck my nose against the opening. Big jammy blackberry. Let it air in the glass for 45 minutes and could hold back no longer. Lean but flavorful dark juice with a steak of acid but balanced by a long smooth finish.

NobleRottersSydney - 1996 South Aust reds (Alio's, Surry Hills): [cork, 13.5%] {Gordon} Double-decanted about 3 hours prior to drinking. Developing nose of classic Penfolds CS style; dark currants laced with vanilla and meat. The core of the palate is rich and ripe; the acid’s a little jangly; it has high level powdery tannins, and the oak is settling in. The fruit is still quite primal in many ways; it has a long even palate and a long finish, but needs lots more time to soften and charm. Keep another ten years at least for best effect, although it’s more rewarding to drink now than this note really indicates, I must admit.

Rich fragrant Cabernet in the classic Aussie mould. Big and plush, bold, with the usual Eucalyptus notes. Not at all overbearing however despite its overt style - beautifully balanced.
