Description

Sébastien Giroux took over the reins of the Domaine familial in 2009.
After a career in sports automotive mechanics, he decided to reconvert and return to the sources to produce precise and balanced wines that contribute to place the Mâconnais among the major regions of Burgundy.
Estate :
The estate covers 7 hectares on 4 appellations: Mâcon-Fuissé, Pouilly-Fuissé and Pouilly-Fuissé 1er Cru (since 2021) and Pouilly-Loché. Its plots are mainly in the commune of Fuissé, climates «Les Belouses», «Les Petites Bruyères», «La Cadole», «La Roche» and «Les Vignes Blanches», for the 1st Cru. The Mâcon-Fuissé are from a plot located at the southern end of the village of Fuissé, not far from Chaintré. On the village of Loché, a single plot «Au Bucher», but two different years of planting from which come two vintages of this confidential appellation. The diversity of the soils, altitudes and exhibitions of each of the plots allow Sébastien Giroux to work in the constant concern to best express each of his terroirs.
Since his arrival, Sébastien has gradually changed the methods of viticulture: a greater respect for the environment, manual and rigorous soil work. Since taking over the farm, Sébastien has been involved in organic farming, and he firmly believes that only a living soil can produce great wines. The request for certification was made in 2019, the 2022 vintage will be officially in organic farming. .
According to Sébastien, some plots offer the possibility to be conducted in biodynamic, he has been applying the practices since 2021 in order to produce wines more and more authentic.
In the cellar, and with this magnificent raw material, Sébastien advocates patience with maturation of 12 to 30 months, a real particularity of the Domaine in the region.
Depending on the appellations, you will find freshness and immediate pleasure with Mâcon-Fuissé , or real moments of gastronomy with the purity, precision and minerality of Pouilly-Fuissé and the delicious floral and fruity elegance of Pouilly Loché.
